Recipe from the Black Countess of Strozzapreti with Hare Sauce Ingredients500g of strozzapreti750 g of hare chopped to taste tomato sauce1 stalk of celery1 onion 1 bunch of parsley1 clove of garlic1 sprig of rosemary2 leaves of red laurel sufficient for marinating4 tablespoons of extra-virgin olive oil1 peperoncinosale PreparationMeat to marinate for 3-4 hours the hare in red wine and crushed garlic, laurel and rosemary. Then clean the onion, slice it thinly and brown it in oil with the diced bacon, celery and parsley. Add the meat, brown it on all sides, wetting it with the marinade liquid, salt and season with the chopped chilli pepper. Add the tomato sauce and cook over low heat for about 40 minutes. Once the meat is cooked, remove it and put it on a plate keeping it warm. Cook the pasta al dente and season with the hare sauce. Place the meat on top and serve immediately. |
