Recipe from the Black Countess Polenta with Beans and Cod Cod Ingredients350 g corn flour200 g dried beans150 g chopped cod, sponged and de-iscacked tomato sauce1 chilli pepper1 sprig of salted sage oil Preparation Put the beans to soak for 12 hours in cold water, then boil them in plenty of water until they become tender. Bring to the boil 1.5 liters of salted water, and gradually pour in the corn flour, stirring continuously with a wooden spoon to prevent lumps from forming. In a frying pan heat the oil with the sage, add the cod and let it cook for 5 minutes on both sides, add the tomato sauce and beans, continue cooking for another 15-20 minutes, trying not to break up the cod. Prepare the dishes with hot polenta and place the cod with beans on top. Serve with chopped chilli. |
