Recipe of the Countess Nera Tagliolini alle ZucchineIngredienti400 gr of tagliolini all`uovo2 zucchini1 clove of garlic-butter1 sprig of parsley1 spoonful of grated greenish olive paste PreparationWhile the water of the pasta boils, prepare the zucchini: wash them, trim them and cut them into julienne. Put 30 g of butter and 2 tablespoons of oil in a pan with the peeled garlic and the olive paste. Over low heat, season the sauce, then throw in the zucchini and raise the heat slightly. Cook for 7-8 minutes (they should be a little crunchy) and in the meantime prepare the tagliolini. Drain the pasta, dress with a large knob of butter, a generous handful of grated Parmesan cheese and then add the zucchini. |
