Recipe of the Black Countess - Amatriciana revisited Ingredients: - 150 gr. CURCUCI - 1 red onion of Trope - 2 teaspoons of chopped chilli pepper - a sprig of rosemary - 2 leaves of sage - 5 tablespoons of organic olive oil - 1 jar of tomato sauce CASA MORANA - 3 tablespoons of "Capuliato di Pomodorini al Finocchietto" CASA MORANA - 1kg of spelt paste Procedure:- prepare a sauté with chopped onion, oil, chilli peppers, rosemary and sage - sauté over very low heat for 10 minutes - add the coarsely chopped salami - brown for 5 minutes - add the cherry tomato capuliate and mix - add the cherry tomato sauce and leave to cook for 15 minutes - in the meantime boil the spelt paste, drain al dente and pan-fry with the sauce |
